About

Specialty coffee roastery based in Querétaro, Mexico, run by Matías (head roaster and green buyer, PhD in Public Policy) and Rocío (sensory lead). Focuses exclusively on Mexican single-origin lots from producers in Hidalgo, Puebla, Oaxaca, Chiapas, Veracruz, Guerrero, and Nayarit. Operates on principles of fair trade, direct relationships with producers, and ecological sustainability. Won the Mexican National Roasting Championship 2024 and represented Mexico at the World Roasting Championship in Copenhagen 2024 (17th place).
