Thoughtful Coffee is a one-person nanoroastery operating out of Brooklyn, New York, founded by Jon and Kate. The roastery focuses on light-roasted, fruity, floral, and complex coffees, with an emphasis on transparency around pricing and process. It specialises in coffees that highlight the impact of post-harvest processing on flavor, including experimental and naturally processed lots, at accessible price points.
