Surry Hills, Sydney at 547 Bourke St — founded by Dan Yee (ex-Salvage, former barista of the year) and Shoji Sasa (ex-Mecca, ex-Single Origin, former barista of the year). Coffee-only concept: no food, no other drinks. Minimalist Scandinavian-inspired space with American oak and a brushed-brass bar. Roasts in-house on a Joper visible behind the counter; brews on a Slayer espresso machine. Focus on seasonal rotations from Colombia, Guatemala, Ethiopia, Rwanda, and Kenya — avoid pre-shipment samples, buy in small batches for freshness, new selection every month, roast for the qualities of each particular coffee. Hours: Mon–Fri 7 am–1 pm, Sat–Sun 8 am–1 pm.
