It's back! From Finca El Chaferote in San Agustín, Huila, run by third-generation grower Erick Bravo. 15,000 of the farm's 22,000 trees are Pink Bourbon at 1,550 masl. After harvest there was a 48-hour fermentation in cherry, followed by 36 hours of dry fermentation after de-pulping — technically washed, but with fruit-forward character to show for it. Tangy grapefruit, blackberry, and a variety of flowers.
