About this lot

The Gara Agena Washing Station is located near the Geta River in the Bura district of Sidama, Ethiopia. Cherries are picked ripe, soaked for 8 hours, depulped, then fermented for precisely 36 hours before drying on raised beds for 21 days. This "Special Prep" (called "Premium" in Ethiopia) lot is collected from a limited number of smallholder farmers, with 90% perfectly ripe cherries hand-sorted and processed separately.
