Located near the town of San Martin Jilotepeque, Guatemala, Juan Luis Barrios Ortega grows these Bourbon 65%, Typica 30% and Pache 5% varietal trees 1750 meters above sea level on his family’s two farms, La Merced and Retiro de Quisaya. Guatemala Retiro Natural Process is the same great Guatemala Retiro but a new process of the green beans this year that dries the bean in the cherry on the patio in the sun. The beans are turned meticulously to ensure an even drying process and a complex flavor profile.
