About this lot

From the Guabo lot on Hacienda La Esmeralda's El Velo farm, a multi-year Best of Panama winner. Cherries are depulped and fermented at 16°C in stainless steel tanks for 72 hours (the FC cold-ferment code), then dried 20 days in a climate-controlled facility.
