Pink Bourbon from Finca Monteblanco (Rodrigo Sanchez Valencia) in Huila, Acevedo. Cherry harvested at 26–30 Brix, pulped and fermented at 10–14°C for 76 hours in a refrigerator, then dried on parabolic beds and raised beds in shade for 23–25 days. Clean, highly floral and fruit-forward; described as sweet and floral lemonade.
