About this lot

Semi-washed pink bourbon from Finca Buena Vista. Cherries picked based on density, depulped, and processed using a semi-washed protocol preserving part of the mucilage, dried on raised beds for 16-22 days. Berries and citrus with a sparkling acidity and a slight savory quality.
