Pache from Finca La Senda in Aldea el Socorro, Acatenango, Guatemala. Run by Arnoldo Perez-Melendez and Maria Eugenia Escobar. 72-hour carbonic maceration in sealed stainless-steel wine tank at 18C, then sun-dried on patios for 12 days. 1700 masl.
