About this lot

Ferment-forward anaerobic microlot from Loc Rung ("Nature's Gift"), Dung K'No, Lam Dong Province, Vietnam, managed by Kate Nguyen and Leo Nguyen. Extended 192-hour anoxic fermentation in water, then 15-20 day raised-bed drying. Tart red fruit, pomegranate and cherry notes.
