About this lot

Anaerobic-processed lot from the Manzanal farm at Don Eli mill in Costa Rica. Mature cherries undergo 24-hour open-air aerobic fermentation, then 3-day closed anaerobic in stainless steel, followed by slow shade drying on raised beds.
